May is my favorite month for a few reasons… first & foremost it feels like the start of summer - once it’s May, the flowers really start to bloom, it starts to get warmer & it’s also my birthday month - & my husbands - so we usually plan a trip… not sure what we’ll do this month, but we better start planning!

A few exciting things are going on this month including the Red Gold Tomato Challenge which I just posted to my Instagram yesterday! If you take the challenge before the end of the month of May, you could win Red Gold Tomatoes for a whole YEAR! And if you’re not familiar with red gold tomatoes, check out my video (or just look at the photo below) so you can see how gorgeous these tomatoes are - I was honestly blown away! I’ve got some delicious recipes launching this month including a Mexican inspired pasta dish launching this Sunday for Cinco de Mayo which includes my brother’s tequila, Real Del Valle plus a spicy tomato sauce, cheese & crema that I got from a local Mexican market in San Diego :) It was seriously INSANE with the best kick & flavor from the Mexican spices and I paired it with some homemade mini potato gnocchi - Full recipe & extended video is available now on my website!

I’m starting my summer pasta salad series this month, The Sunday Salad, which launches the back half of the month just in time for Memorial Day Weekend and will go through the summer and include some amazing & easy pasta salads including an Antipasta Pasta Salad & my fave Mexican Street Corn Pasta Salad that I created last year - & so many more!

I’m planning on launching my next online course, Filled & Shaped Pasta Making, later this month. I was trying to launch my classes every few weeks but it’s looking more like once a month now, so I appreciate all of your patience! The amount of work that goes into these classes makes it really hard to get them edited & launched while still getting my other pasta stuff done! It’s been a little overwhelming the last few months, but I finally feel like I’ve got a good schedule going on, so more to come on that!
